Strawberry jam made with vinegar is exciting. Red wine vinegar gives the jam a tart finish. Balsamic vinegar is pleasing. Some people may add black pepper and balsamic vinegar. Hummingbirds  supposedly eat simple syrup. I know why? Simple syrup is nectar. My school of thought is affirmed. The most basic things tend to be very exciting. Next week I should be canning to preserve fruit using pectin. The kitchn will help me to improvise to make my own canning equipment since someone must have so many things for canning.
Note: 1) using this recipe, 3 lb of strawberries makes 32 oz of jam (strawberries where I shop are usually sold in 1 lb or 2 lb containers)
