Raspberry Jam Made With Gelatin


This recipe should make enough jam to fill a pint sized mason jar to the top

Note: 1) Chef Thomas Keller uses a recipe that is similar to this recipe from the Culinary Institute of America, the recipe uses a single apple to have pectin


  • 12 oz (3 cups) raspberries
  • 1/2 cup sugar
  • 1 envelope Knox Unflavored Gelatine
  • 1/2 cup water


  • Sprinkle the gelatin over the water in a bowl
  • Heat the raspberries and the sugar in a saucepan
  • Stir the mixture often
  • Once the mixture is at the boiling point (use a thermometer), boil it for 1 minute
  • Add the gelatin and return to a boil
  • Once the mixture is boiling, reduce the heat to simmer the mixture for 3 minutes
  • Remove the jam from the heat
  • Skim the foam from the top of the jam
  • Ladle the jam into a jar

    1. A cookbook made for Knox Unflavored Gelatine includes similar recipes. Pectin is a similar gelling substance. I have more information. Someone suggested apples rather than using pectin or gelatin. Gelatin can spoil. It is great for “cheating.”
